“The majority of people would match the colour black to a bitter flavour, however black
garlic delivers so much in terms of flavour - and in my mind, to colour. The cloves, umami
rich - fermented, sweet and chewy, give feelings of liquorice, caramel and balsamic.
Umami (Japanese for “delicious savoury taste”) is such a complex taste and I wanted to create a painting that reminded me of all the layers of flavours.”
