From the artist: "Beetroot was the starting point for this painting. I was inspired by the young american chef Flynn McGarry whose goal was to reinvent beetroot, revealing it to be an extraordinary vegetable. I love this idea of an ingredient showing us something new, to spark an unfamiliar excitement and wonder. I try and approach my painting practice in the same way, to discover something new about paint, I want to surprise and delight myself. In order to do this I need to be inspired by flavour, so I went on a beetroot journey of braising, smoking, juicing and dehydrating. The resulting flavour bombs allowed me to fall in love with beetroot, in a new way. I took all this sensory pleasure back into the studio, with a desire to capture that feeling of loving beetroot. Thinking of colour in terms of flavour and getting the balance just right, until it's ready to eat with the eyes."
